Taco Soup

 Ingredients

1/2 lb ground turkey                    1 onion

1 pkg ranch mix                           1 pkg taco seasoning

14 oz tomato sauce                      3 cans beans

1 lb frozen corn                           4 oz greet chili

2 c water


Directions

cook chopped onion and ground Turkey in pot.  Add all other ingredients and simmer.

Mexican Rice

 Ingredients

2 1/2 c water                               2 T oil

1-2 T dried onion                        2 t salt

1/2 t cumin                                 1/2 t chili powder

1-8 oz can tomato sauce             2 c rice           

Directions

Mix all in pan.  Bring to boil.  Turn down to low heat and cover.  Cook for 10 minutes.  Remove lid and stir.  Replace lid and cook 5-10 minutes longer.


Italian Chicken

 Ingredients

1 lb chicken                1 packet Italian dressing

8 oz cream cheese       2 cans cream of chicken soup

1 cube butter

Directions

1. Combine chicken, butter, cream of chicken soup, and Italian dressing in crock put and cook for 4-6 hours on low

2. Shred chicken and add 8 ounces of cream cheese.  Serve over pasta


Hawaiian Sweet Bread

 Ingredients

1 c warm water                        1 T active dry yeast

5 T white sugar                        1/4 t vanilla extract

3 c all-purpose flour                1/4 lemon extract

3/4 t salt                                   2 eggs

2 T dry milk powder                4 T margarine

2 T dry potato flakes

Directions

1. Combine water, yeast and sugar and let it proof.  

2.  Mix additional ingredients and allow to double in size.  

3. Grease 9x5 loaf pan and shape dough.  Allow to double in size.  Preheat oven to 350 degrees

4.  Bake in preheated oven for 30 minutes


Basic Flaky Pie Crust

 Ingredients

1 1/4 c all-purpose flour                        1/2 c shortening, chilled

1/4 t salt                                                 3 T ice water


Directions

1. Whisk flour and salt together in a medium size bowl.  With a pastry cutter, cut in the cold shortening until the mixture resembles course crumbs.   Drizzle 2-3 T ice water over flour.  Toss mixture with fork to moisten, adding more water a few drops at a time until the dough comes together.

2.  Gently gather dough particles together into a ball.  Wrap in plastic wrap and chill for atleast 30 minutes before rolling.  

3.  Roll out dough and put in a pie plate.  Fill with desired filling and bake.  


Thai Chicken Salad

 Ingredients

4 scallions sliced thinly                             Cilantro, chopped to taste

1 bag baby spinach                                    2 roasted chicken breasts, cooked and shredded

1/2 package shredded carrots                    1 bottle Thai peanut sauce

1 lb thin spaghetti, cooked and cooled      peanuts, chopped

Cristy Chinese noodles

Directions

1. Mix scallions, cilantro, spinach, chicken, carrots and pasta together in large bowl

2. The sauce is spicy so add a small amount, mix and taste.  Repeat until desired level of flavor is achieved

3. Just before serving sprinkle chopped peanuts and crispy noodles on salad



Apple Crumb Pie

 Ingredients

Pastry for single crust 9-inch pie                6 c chopped, peeled, tart apples

2 T melted butter                                        2 T sour cream

4 t lemon juice                                            1/2 c sugar

1 T all-purpose flour                                    1/2 t ground cinnamon

1/2 t ground nutmeg

Topping:

1/2 c all-purpose flour                                   1/2 c sugar

1/4 c cold butter

Directions

Line 9 inch pie plate with pastry, flute edges.  In large bowl, combine the apples, butter, sour cream, lemon juice, sugar, flour, cinnamon, and nutmeg.  Spoon into pastry shell.  For topping, combine flour and sugar in a bowl; cut in butter until mixture resembles course crumbs.  Sprinkle over filling.  Bake at 375 degrees for 45-50 minutes or until the filling is bubbly and the apples are tender.  Cool on wire rack.
